Grilled cheese sandwich with avocado and spinach

Ingredients for 1 sandwich :

  • 2 slices bread (we used a white bread, but one filled with lots of different whole grains and seeds would be *awesome*)
  • 2-3 tablespoons Green Goddess Herb Pesto (recipe below)
  • 2 slices mild white melty cheese like mozzarella
  • handful fresh baby spinach
  • ¼ avocado, sliced
  • 2 tablespoons goat cheese, crumbled
  • olive oil (and butter if you’re so inclined)

Directions:

  • Spread about 1 tablespoon of Green Goddess Herb Pesto onto each slice of bread (2 tablespoons total, but if you’re sensitive, go light, the pesto is STRONG).
  • On one slice of bread, add 1 slice of cheese, sliced avocado, crumbled goat cheese, spinach, second slice of cheese, then top it with second slice of bread. Press together gently.
  • Heat 1 tablespoon olive oil in a frying pan over medium low heat. (If you want to use butter, add it to the oil and let it melt). Add the sandwich to the oil and cook until bread is golden brown. Press down on the sandwich lightly, then flip the sandwich over and cook until second side is golden brown.

Curried Potato And Cauliflower Soup

You’ll need:

olive or other vegetable oil for frying
2 medium-sized potatoes, about 400g
One small head of cauliflower, about 350g when leaves and stalk removed
1 medium-sized onion, around 150g, finely chopped
2 large cloves garlic, finely chopped
1 tblsp finely chopped fresh ginger
1 small fresh green chili, very finely chopped
1 tsp ground cumin
1 tsp ground coriander
0.5 tsp turmeric
0.25 tsp ground cardamom
1x400g tin tomatoes
1x400g tin coconut milk
1.5 tsp salt
2 tsp sugar
1.5 tblsp lime juice
1 tsp garam masala
To garnish:
50g cashew nuts, roasted and chopped roughly
3-4 tblsp chopped fresh coriander
You’ll also need:
A food processor or blender if you want a purĂ©ed soup – an immersion blender is handiest.

The Steps:
  • If you have raw cashew nuts and need to roast them, then preheat your oven to about 150C, spread the nuts on a baking tray and roast for around 10 minutes or until they have browned lightly.
  • Scrub the potatoes and, leaving the skin on, chop into approx 1cm cubes. Wash the cauliflower and break into small florets.
  • Place a large, heavy saucepan over a medium heat, add enough oil to coat the pan. When hot, add the onions and garlic. Stir and fry for around 4 minutes, until softened but not browned.
  • Add the ginger and green chili and stir and fry for about a minute more.
  • Add the cumin, coriander, turmeric and cardamom, stir briefly, then add the potatoes, tinned tomatoes, coconut milk, salt, sugar and lime juice. Stir to mix, then bring to the boil, cover and simmer for about 10 minutes.
  • Add the cauliflower florets and, if necessary, a small amount of water so that the cauliflower is almost covered with liquid, bring back to the boil and simmer for another 20-25 minutes, until the vegetables are tender.
  • Stir in the garam masala and cook for a couple of minutes more.
  • You can serve as is, as a curry or chunky soup or blend it, using a food processor or blender – it’ll be very thick, so thin it out to your desired consistency with additional boiling water.
  • Serve topped with chopped, roasted cashews and chopped fresh coriander and along with warm breads.

The Variations:
If you’re keeping this chunky, curry style, you could certainly throw in some other veg, like fresh or frozen peas or some french beans, towards the end of cooking.

The Results:
Hearty, dinner-sized portions for 4, smaller portions for around 6

The Orgasm is a cocktail that can be either served on the rocks or layered and drunk as a shooter. It is an IBA official cocktail.

There are many other versions of this popular mixed drink. Another variation contains Vodka, Amaretto, Triple Sec, White Creme de Cacao, and Light Cream. The light cream has a 1 oz. contribution to this drink while the other ingredients have a 1/2 oz. contribution. This variation of the recipe is more commonly known as a "Screaming Orgasm". Cocktail recipes change over time with the addition and/or subtraction of their ingredients.

Cuba Libre (Rum & Coke) Cocktail Recipe

Cuba Libre translated means “Free Cuba” and was popularized around the end of the Spanish American War. This mixed drink is similar to a Rum & Coke, but the addition of fresh lime juice lightens up the drink and defines the Cuba Libre. It's an easy drink to remember and popular enough that it would be good to add it to the drinks to know list.

Ingredients:

    * 1/2 lime
    * 2 oz light rum
    * 4 oz cola

Preparation:

   1. Squeeze the juice of half a lime into a collins glass.
   2. Drop the lime into the glass.
   3. Add ice cubes.
   4. Pour the remaining ingredients into the glass.
   5. Stir well.

Thai Beef Salad

1 lb tender beef steak, such as top sirloin.

For the salad:
1/2 red onion thinly sliced
1 tomato, cut into wedges
1 cucumber, peeled, cut lengthwise in half and thinly sliced
1-2 Thai bird’s-eye chilies or according to taste (I use 1-2 serrano chilies)

For the sauce:
1/4 cup Thai fish sauce
1/4 cup lime juice
2 - 3 garlic cloves, minced
1/2 cup cilantro leaves, roughly chopped
1/4 cup chopped scallions

Grill beef until medium to well-done. Slice thinly on the bias and set aside. Combine all the salad ingredients and add the sliced beef. Make the sauce by mixing together all the ingredients and toss with the salad.

Serve over a bed of green lettuce (e.g. Romaine) whole or chopped, or place individual servings over a large lettuce leaf.

Variations - Mint and sliced shallots can be added to the salad. Grilled shrimp or calamari may be substituted for the beef. Instead of lettuce, the salad may be served with a wedge of fresh cabbage. Palm sugar (or any other sugar) may be added for a slight touch of sweetness.

Orange Chocolate Mousse

Ingredients

1 slab 70% Lindt chocolate
1 tsp grated orange zest
2 Tbs caster sugar

3 eggs, separated

½ cup(125ml) cream
2 Tbs orange liqueur (Grand Manier)

Break chocolate in pieces and melt in a bowl over boiling water. Combine the orange zest, egg yolks and sugar in a mixing bowl and beat until light and creamy.
Add the melted chocolate to the egg mixture and fold in with a spatula until it is properly mixed. In two separate bowls, beat the egg whites until stiff and also the cream until it forms soft peaks. Fold the cream into the chocolate mixture, take care not to over mix. Now do the same with the egg whites. If you are using liqueur, this is the time to also fold it into the mousse. Spoon the mousse into the hollow oranges and chill overnight or for at least 2 hours. Serve with chocolate shavings and a sprig of mint.

Fruit and Vegetable Carving - What is it?

Welcome to the wonderful world of fruit carving. Whether you’ve considered hosting an elaborate event or a simple party amongst friends, fruit carving will be sure to be a hit. With the latest trend of theme parties increasing, the art of fruit carving can bring that extra special pizzaz to your party. The fruit you carve can create fanciful centerpieces for your parties at a fraction of the cost that expensive caterers or party planners would charge. You’ll save on both the cost of food and decorations. For occasions such as baby showers, bridal showers, weddings, birthday parties, or just a fun night with the friends, there are many creative fruit carving ideas that will impress your guests.

What is fruit carving?

Fruit carving is the art of carving and shaping fruit into intricate designs to create an elaborate centerpieces or food holders for parties. Made popular by Asian cuisine creators, fruit carving explores the creative realm of using food as decorations. Carve a watermelon basket and use as a fruit bowl. Create a pineapple flower bouquet display and place in a vase as a centerpiece. Make a cantaloupe boat for the kids. Whatever the occasion, your friends and family will be glad you did.

How to get started?

First, pick a theme. Having a luau? Make little hula girls on pineapple surf boards. A baby shower? Create a watermelon baby stroller to use as a serving bowl for fruit. A safari themed party? Make giraffes with skewers and place strawberries, mangoes, and grapes on them. Can’t think of a theme? Do an online search. There are fruit carving ideas available. Because of this recent craze, books on fruit carving, articles, and websites provide frequent how to articles and, often times, will show you a step by step plan to create the shapes you want to carve out of the fruit. Carving watermelons are usually the easiest to begin with because of their size, firm rind, and soft center. Most novice fruit carvers choose to begin their carving journey there.

Once your theme is chosen you will need to choose a variety of fruit. Watermelon, cantaloupe, honeydew melon, pineapple, grapes, kiwi, oranges, strawberries, blueberries, or any kind of fruit that doesn’t brown easily (such as apples, bananas, or avocadoes) work wonderfully for edible centerpieces.  Utensils like ice cream scoopers, a sharp knife, a cutting board, skewers, and tooth picks should all be set up ahead of time.  Readying your supplies ahead of time will aid in creating easy to make, elaborate fruit carved masterpieces.

How long will it take?

Like with any skill, fruit carving takes time to perfect. Practice, practice, practice. Do not wait until the morning of a big party to begin your first carving project. Practice ahead of time making strawberry and pineapple flowers to dip in chocolate for your family one night for a special dessert. Or, make a watermelon fruit basket to bring as a gift to your neighbors to say thanks for being a great neighbor. The more you practice the more confident you will become in your fruit carving abilities. The more confident and adept you become, the less time consuming your fruit carving projects will be.

Whether beginning fruit carving as a hobby, to impress friends and family, or as gifts to others, you will be glad you did. It’s a simple and inexpensive craft to undertake. It will make others feel like you’ve taken the extra time to make them something special and will show them you care. Carving fruit into fun shapes will be sure to make you a hit at any party.
